Doi Chira Jolpan
Washed chira with thick curd and gur — the simple, cooling Bihu morning jolpan every Assamese home serves with pitha and laru.
Ingredients
- 1½ cups chira (flattened rice)
- 1 cup thick curd (doi)
- 4 tbsp jaggery (gur), grated or liquid
- 2 ripe bananas, sliced (optional)
- pinch of salt
Method
- Wash the chira in a sieve under water 2 times to clean it.
- Soak in water for 5 minutes till soft, then drain completely, pressing lightly.
- Put the chira in a bowl or bell-metal plate.
- Add the curd and a pinch of salt.
- Add the jaggery and mix gently with your fingers.
- Top with banana slices if using, and serve with pitha and laru.
Tip: Use thick, sweet-sour home-set curd and gur from Assam; add a spoon of fresh cream (kreem) for a festive Bihu touch.
