Ilish Macher Dim Bhaja

Hilsa roe fried crisp outside, soft inside — the monsoon delicacy every ilish lover fights over.

Method

  1. Rinse the roe gently, keeping the sacs whole. Pat dry.
  2. Rub with turmeric, chilli powder and salt.
  3. Heat mustard oil till it smokes, then lower to medium.
  4. Fry the roe 3–4 minutes per side, covered, till golden and cooked through.
  5. Serve hot with rice and dal.

Tip: Cover the pan while frying — roe can pop and spit.
