Gahori aru Kola Til
Pork in a rich, dark, nutty black sesame gravy — one of Assam's most treasured pork preparations.
Ingredients
- 750 g pork with fat, cubed
- 5 tbsp black sesame seeds (kola til)
- 2 onions, sliced
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- ½ tsp turmeric powder
- 5 green chillies
- 1 tbsp mustard oil
- salt to taste
Method
- Dry roast black sesame on low heat until it crackles. Cool and grind into a fine paste with a little water.
- Boil the pork with turmeric and salt in 2 cups water for 20 minutes. Keep the stock.
- Heat mustard oil, fry onions till golden, add ginger and garlic paste.
- Add the boiled pork and fry 10 minutes till fat renders and edges brown.
- Add sesame paste, chillies and 1 cup reserved stock. Simmer 15 minutes till thick and black.
- Serve hot with steamed rice.
Tip: Grind the sesame very fine — a smooth paste gives a glossy gravy.
