Tender boiled pork chopped and tossed with raw onion, ginger and green chilli — Khasi pork salad, clean, sharp and refreshing.
Ingredients
- 500 g pork with some fat (shoulder or head meat)
- 2 onions, finely chopped
- 1½ tbsp ginger, finely chopped
- 4 green chillies, finely chopped
- ½ lime, juiced (optional)
- 2 tbsp coriander leaves, chopped
- salt to taste
Method
- Put the pork in a pot with water to cover and 1 tsp salt.
- Boil for 30 minutes until fully cooked and tender but still firm (or 3 whistles in a pressure cooker).
- Drain and let the pork cool for 10 minutes.
- Chop the pork, fat and all, into small bite-sized pieces.
- Add the onions, ginger, green chillies and salt and mix well with your hands.
- Squeeze over the lime if using, toss in the coriander and serve at room temperature.
Tip: Traditionally pig's head meat is used, sometimes with the brain mashed in to make it creamy. Chop the onion very fine so it softens in the salad.
